The San Giulio IGT Rosato di Toscana is a wine that captures the essence of the region with a careful selection of grapes, combining 80% Sangiovese with 20% Trebbiano. This choice is not random but aims to balance the robustness of Sangiovese with the freshness of Trebbiano, thus creating a rosé with character and pleasantly complex.
Intermediate vinification for red grapes, a technique that is positioned between white and red vinification, is crucial to obtain the desired color and specific aromatic nuances. The short maceration of the skins not only helps to obtain that delicate rosé color, but is also essential to infuse the wine with a fresh and floral bouquet. This process allows the extraction of light and pleasant aromas, avoiding the absorption of too aggressive tannins which could overwhelm the freshness of the wine.
The result is a Rosé that explodes with fresh fruit aromas, reminiscent of berries and citrus fruits, making it an ideal companion for a variety of summer dishes. It pairs beautifully with light appetizers, fish dishes or simply as an aperitif.
